Pickled Onions


Super easy and super versatile, this recipe will be a staple in your kitchen. Try it with tacos, rice bowls, or your favorite salad today!

Cook Time: 0 minutes | Prep Time: 1 hour, 15 minutes | Total Time: 1 hour, 15 minutes

Ingredients:

  • 1 red onion

  • ¾ c. Apple cider vinegar

  • 1 ½ c. very hot water

  • 1 Tbsp. granulated sugar

  • 1 ½ tsp. salt

  • 8-10 whole peppercorns


Directions:

  • Using a mandolin on ” slice setting, slice red onions and place on a plate and set aside.

  • In a large measuring cup mix vinegar, water, and sugar together. Stir until sugar has been dissolved.

  • Add salt and peppercorns to vinegar mixture.

  • Place onions in mason jar or large bowl and pour in mixture. Let sit on the counter for 1 hour, then refrigerate.

  • Store in air-tight container and store in refrigerator for up to 5 days.

Notes:

  • Want it spicy? Add chopped jalapenos.

  • Add a clove of garlic for added flavor.

  • This recipe calls for a mandolin to ensure thin, even-cut slices. However, if you don’t have a mandolin, no worries! Use a sharp knife to cut onion in thin slices.
