Ingredients:
1 red onion
¾ c. Apple cider vinegar
1 ½ c. very hot water
1 Tbsp. granulated sugar
1 ½ tsp. salt
8-10 whole peppercorns
Directions:
Using a mandolin on ⅛” slice setting, slice red onions and place on a plate and set aside.
In a large measuring cup mix vinegar, water, and sugar together. Stir until sugar has been dissolved.
Add salt and peppercorns to vinegar mixture.
Place onions in mason jar or large bowl and pour in mixture. Let sit on the counter for 1 hour, then refrigerate.
Store in air-tight container and store in refrigerator for up to 5 days.
Notes:
Want it spicy? Add chopped jalapenos.
Add a clove of garlic for added flavor.
This recipe calls for a mandolin to ensure thin, even-cut slices. However, if you don’t have a mandolin, no worries! Use a sharp knife to cut onion in thin slices.
