Potatoes, leeks and bacon: this Sunday breakfast side dish is a wonderful companion to your fried egg and buttered toast.
Prep Time: 15 minutes | Cook Time: ~30 minutes | Total Time: ~45 minutes
Ingredients:
1 lb. red potatoes
1 leek
¼ lb. bacon (about 3-4 slices of bacon)
1 clove garlic, crushed or 1/2 tsp. garlic powder
2 tsp. olive oil, divided
1 ½ tsp. salt, divided
1 tsp. fresh parsley, finely chopped
½ tsp. pepper, divided
½ tsp. paprika
¼ tsp. cayenne powder (optional)
Directions:
Clean leek and set aside.*
Cut potatoes in half and place in large pot of cold water with 1 tsp. salt.
Bring pot to boil and partially cook potatoes, around 4-6 minutes.
Drain potatoes and set aside.
In a large skillet, fry bacon to desired crispiness.**
Place bacon on paper towel-line plate and set aside.
Drain all but 1-2 tsp. bacon grease.
Place skillet on medium heat, add 1 tsp olive oil, ½ salt and paprika, ¼ tsp. cayenne and pepper to potatoes, and cook for around 15 minutes, turning occasionally, until golden and crispy.
In a separate skillet, add 1 tsp. oil over medium heat.
Add leeks and cook for 10-25 minutes, until soft.
Add leeks, garlic, and seasonings (add remaining ½ tsp. salt at this time) to potatoes and stir occasionally for 2-3 minutes.
Chop bacon into fine strips and add to skillet, stirring occasionally for an additional 2 minutes.
Transfer to plate and dig in!
Add a fried egg or a side of scrambled eggs to round out the dish (optional).
*How to Clean Leeks
Leeks will have a lot of soil and grit within the layers of the plant so you will want to clean them properly to avoid a dish full of soil and here’s how to do it:
Cut roots off the end of leeks and cut fibrous green stems.
Cut leek in ½ and thinly slice white to light green part.
Place cut leek in bowl of water and try to separate the leek slices so soil will fall to the bottom of the bowl.
Let sit in water for around 5 minutes,
Using a slotted spoon, pull leeks from water and place on towel lined plate.
*In the third photo, you'll see the grit from the sliced leeks separated from the leeks at the bottom of the bowl*
Notes:
** I would recommend slightly under-cooking the bacon as it will finish cooking with all ingredients together before you plate the dish.
Not a fan of bacon? Feel free to use breakfast sausage or a vegetarian alternative, such as soy chorizo. If you omit bacon and its drippings, add 1 tsp. olive or avocado oil to potatoes when cooking.
