Spanish-Style Rice

This is an easy rice recipe with a bit of kick and color - try it with grilled chicken thighs for a perfect weeknight dinner.




Prep Time: 15 minutes | Cook Time: 30 minutes | Total Time: 45 minutes

Ingredients:

  • 1 c. long grain rice

  • 1½ c. chicken stock

  • ½ yellow onion, finely diced

  • 1 medium carrot, finely diced

  • 1 celery stalk, finely diced

  • 1 Roma tomato, diced

  • 1 Tbsp. olive oil

  • 1 Sazon seasoning packet

  • 1 tsp. salt

  • ½ tsp. pepper

  • 1 garlic glove or ½ tsp. garlic powder

  • Parsley to taste



Recipe:

  • Rinse rice under cold water and set aside

  • In skillet with lid, sauté carrots for 1 minute, then add celery, sauté for 2 minutes.

  • Add onion, sauté for 3 minutes.

  • Add rice and sauté for 4-5 minutes, stirring often.

  • Turn heat on high and add chicken stock.

  • Bring to boil, add Sazon seasoning, salt, and pepper.

  • Cover, reduce to simmer, and simmer to 15 minutes.

  • Once stock is evaporated, sit for 5 min.

  • Add parsley, stir, and serve.


Notes:

  • Add 1/2 cup tomato sauce either in lieu of fresh tomatoes or in addition to tomatoes.

  • Can't find Sazon seasoning at the store? Make your own! There are some great recipes, including this one from one of my favorite food bloggers, Skinny Taste.

  • Vegetarian? Substitute vegetable stock or water for chicken stock.
