This is an easy rice recipe with a bit of kick and color - try it with grilled chicken thighs for a perfect weeknight dinner.
Prep Time: 15 minutes | Cook Time: 30 minutes | Total Time: 45 minutes
Ingredients:
1 c. long grain rice
1½ c. chicken stock
½ yellow onion, finely diced
1 medium carrot, finely diced
1 celery stalk, finely diced
1 Roma tomato, diced
1 Tbsp. olive oil
1 Sazon seasoning packet
1 tsp. salt
½ tsp. pepper
1 garlic glove or ½ tsp. garlic powder
Parsley to taste
Recipe:
Rinse rice under cold water and set aside
In skillet with lid, sauté carrots for 1 minute, then add celery, sauté for 2 minutes.
Add onion, sauté for 3 minutes.
Add rice and sauté for 4-5 minutes, stirring often.
Turn heat on high and add chicken stock.
Bring to boil, add Sazon seasoning, salt, and pepper.
Cover, reduce to simmer, and simmer to 15 minutes.
Once stock is evaporated, sit for 5 min.
Add parsley, stir, and serve.
Notes:
Add 1/2 cup tomato sauce either in lieu of fresh tomatoes or in addition to tomatoes.

Vegetarian? Substitute vegetable stock or water for chicken stock.
