Break out your spice rack for this delicious and spicy marinade mix that pairs perfectly with boneless, skinless chicken thighs.
Prep Time: 15 minutes active, 1-8 hours inactive | Cook Time: 15 minutes | Total Time: 1 hour, 30 minutes
Ingredients:
1 - 1½ lb. boneless, skinless chicken thighs
1 Tbsp. vegetable oil
1½ tsp. salt
1 tsp. paprika
1 tsp. cumin
1 tsp. dried oregano
½ tsp. black pepper
½ tsp. cayenne pepper
½ tsp. chili powder
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. red pepper flakes
Honey Lime Glaze
¼ c. honey
Juice of 1 lime
Marinade Directions:
Remove excess fat from chicken thighs.
Combine seasonings in small bowl and mix thoroughly.
In a zipped bag or in a bowl, combine chicken, oil, and seasoning mix and combine.
Let sit in marinade for at least 1 hour or up to 8 hours in refrigerator.
Before cooking, let seasoned chicken sit on counter to come closer to room temperature before putting on the grill, 10-15 minutes.
Grilling Directions:
Grill on direct heat, 400°, and grill for 3 minutes per side.
Brush honey lime glaze onto one side of the chicken and cook for about a minute. Flip, brush other side of chicken with honey and cook 30 seconds to 1 minute.
Chicken must reach an internal temperature of 165.
Let rest for 5 min and enjoy.
Notes:
Close the grill lid when cooking the chicken, which will expedite the cooking process.
Enjoy with rice or roasted potatoes and a simple green salad.
If you’re planning to serve chicken more than 5 minutes after resting, you can tent the plate of chicken with tin foil.
Want more spice? Add more seasonings! Recommendation: increase chili powder to 1 tsp.
