Spice-Rubbed Honey-Lime Grilled Chicken Thighs

Break out your spice rack for this delicious and spicy marinade mix that pairs perfectly with boneless, skinless chicken thighs.



Prep Time: 15 minutes active, 1-8 hours inactive | Cook Time: 15 minutes | Total Time: 1 hour, 30 minutes



Ingredients:

  • 1 - 1½ lb. boneless, skinless chicken thighs

  • 1 Tbsp. vegetable oil

  • 1½ tsp. salt

  • 1 tsp. paprika

  • 1 tsp. cumin

  • 1 tsp. dried oregano

  • ½ tsp. black pepper

  • ½ tsp. cayenne pepper

  • ½ tsp. chili powder

  • ½ tsp. garlic powder

  • ½ tsp. onion powder

  • ½ tsp. red pepper flakes


Honey Lime Glaze

  • ¼ c. honey

  • Juice of 1 lime

Marinade Directions:

  • Remove excess fat from chicken thighs.

  • Combine seasonings in small bowl and mix thoroughly.

  • In a zipped bag or in a bowl, combine chicken, oil, and seasoning mix and combine.

  • Let sit in marinade for at least 1 hour or up to 8 hours in refrigerator.

  • Before cooking, let seasoned chicken sit on counter to come closer to room temperature before putting on the grill, 10-15 minutes.

Grilling Directions:

  • Grill on direct heat, 400°, and grill for 3 minutes per side.

  • Brush honey lime glaze onto one side of the chicken and cook for about a minute. Flip, brush other side of chicken with honey and cook 30 seconds to 1 minute.

  • Chicken must reach an internal temperature of 165.

  • Let rest for 5 min and enjoy.

Notes:

  • Close the grill lid when cooking the chicken, which will expedite the cooking process.

  • Enjoy with rice or roasted potatoes and a simple green salad.

  • If you’re planning to serve chicken more than 5 minutes after resting, you can tent the plate of chicken with tin foil.

  • Want more spice? Add more seasonings! Recommendation: increase chili powder to 1 tsp.
