Quick and refreshing, enjoy this sauce with pita and crudité or alongside your favorite sandwich.

Ingredients:
1 c. non-fat plain Greek yogurt
½ grated English cucumber, peeled
1 Tbsp. extra virgin olive oil
1 clove garlic, crushed
1 tsp. fresh dill
1 tsp. fresh parsley
1 tsp. fresh lemon juice
½ tsp. salt
¼ tsp. pepper
Directions:
Peel and grate ½ of cucumber, using a box grater.
Place grated cucumber on a towel and squeeze gently to remove excess water and place in large bowl.
Add all other ingredients and stir gently.
Notes:
Store in refrigerator for up to 5 days. The sauce may be watery so stir well before eating.
